Bacon Chicken Kabobs

Bringing home the bacon is only step one. Step two is saving and investing wisely and step three is cooking with bacon to prepare tasty treats! 

One fun and tasty way to serve bacon, is wrapped around diced chicken breasts on a stick, or Bacon Chicken Kabobs.

You will need:

·        Wooden skewers

·        Boneless/Skinless Chicken Breasts

·        Bacon

To begin, preheat oven to 425 degrees and soak wooden skewers in water for about 30 minutes. While they soak, dice your chicken breasts into cubes (large enough to fit over skewer without breaking). Remove skewers from water, and firmly slide diced chicken to about 2/3 of the way down on the skewer. Continue adding chicken cubes until you reach the top. Do this for as many servings as you’ll need. Once the chicken is on the skewer, take a slice of bacon and starting from the bottom, spiral wrap around in an upward direction. One slice usually gets to the halfway point, so I use 2 slices per kabob. After your chicken is completely wrapped in bacon, place onto foil lined baking sheet that has been sprayed with cooking oil. Place in 425 degree oven and bake for 18-25 minutes.

 

You can also add diced jalapenos to the skewer for added zing!
