Eggstrordinary!

You may have had eggs with English muffins, toast, and wrapped inside of a warm tortilla, but what about eggs wrapped in a colorful vegetable?

To take eggs from just sunny-side-up to eggstrodinary, try these few simple steps:

  1. Choose  yellow, green and red bell peppers.
  2. Rinse, core and cut into 1/4" thick slices
  3. Place pepper slices into skillet sprayed with cooking oil, on LOW temp
  4. Break eggs and gently fill peppers with egg (one per pepper slice)
  5. Add salt, pepper to taste
  6. Cover skillet with foil and allow to cook slowly.
  7. Remove from heat when eggs are your desired firmness.
Sprinkle with shredded cheese, garnish with a sprig of Dill, and serve with whole wheat toast, and your favorite fresh fruit.
