Strawberry Lemongrass Popsicles

Nothing says summer like an ice pop. Bright lemony popsicles with lemongrass stalks standing in as the popsicle stick are a snap to make and look cool, too.

Nothing says summer like an ice pop. Bright lemony popsicles with lemongrass stalks standing in as the popsicle stick are a snap to make and look cool, too. Take a second look at lemongrass, a key ingredient in our Heights at Home Revive products, available at your Mission Viejo Retreat.

Strawberry Lemongrass Popsicles

8-10 4” plastic or paper cups
8-10 Lemongrass stalks
1 pound strawberries, washed, hulled and sliced
¼ c sugar
2 cups pink lemonade

Peel away outer tough layers of lemongrass stalks, leaving only the tender, smooth, inner whitish stalks. Set aside.

Blend the remaining ingredients in a blender, leaving strawberries a bit chunky. Pour into 4” paper or plastic cups. Place lemongrass ‘sticks’ in the drink mixture. Use tape to hold the lemony sticks in place. Put in freezer until frozen completely. Remove from freezer and loosen popsicle from the cups. Enjoy on a hot day.

Lemongrass Tip

Lemongrass is a popular addition to juicing combinations of barley and wheatgrass due to its powerful cleansing and nourishing properties. This citrusy stalk helps detoxify the liver, pancreas, kidney, bladder and digestive tract. It decreases uric acid output, lowers cholesterol, and rids the body of other acid wastes while stimulating digestion and blood circulation. Try it at your local juice bar or juice some at home.

Great recipe. Thanks! I've been looking for ways to use Lemongrass ever since we returned from Thailand. They put lemongrass in just about everything over there, along with ginger.
